Gluten-Free Chocolate Chip Scookie

I set out to make healthy, yummy gluten free chocolate chip cookies, and end up with a scookie.

The consistency of a scone and the deliciousness of a cookie, with just the right amount of sweetness so you can even pair with jam :)

Prep Time: 10 min

Cook Time: 20-25 min

Yield: 10 scookies


1 1/2 c and a little Paleo Flour (Bob’s Red Mill)

1/4 c coconut flour

1/3 tsp baking soda

1/4 tsp salt

2 eggs

6 tbsp coconut oil, melted

1/2 cup coconut sugar ( or brown sugar if you want them sweeter)

1/4 c maple syrup 

1/2 tsp vanilla extract

1/3 c or more chocolate chips 


Preheat oven to 350 degrees Fahrenheit.

Mix together dry ingredients ( flour, baking soda, salt). Mix together wet ingredients (oil, eggs, syrup, extract) add sugar last. Combine all ingredients together, then add in chocolate chips. Add flour or oil if necessary, you want it a little more wet than dry. Place dough in small balls on your cookie sheet, place in oven and cook for 20-25 min until its a little golden on top!
