Gluten-Free Breakfast Crepes
As if breakfast wasn’t already good enough… adding crepes in the mix it AMAZING.
I wasn’t sure how the crepes would turn out at first, but, seriously, they were delicious. And also the easiest recipe EVER.
I used Simple Mills pancake mix and added a little extra Almond Milk to make the consistency more runny. And thats really all it takes!
The technique of maneuvering your pan to get the batter in a nice circle takes a couple tries, but you will get the hang of it.
You can fill these babies with any filling your heart desires, or even make them savory!

Cook Time: 10 min
Yield: 4 crepes
1/2 c Simple Mills Pancake mix
2 tsp coconut oil
4 tbsp almond milk (I used Malk)
Whisk together eggs, milk, and oil until well blended. Add in the mix and make sure it is completely blended. If you need more milk to make it runny, you can add more. It should not be super runny, but enough so that it can spread around.
Next, you kind of have to eyeball each amount. pour the batter (3-4 tbsp amount) onto the center of an oiled pan. As soon as it is poured move your pan in a circular motion to get the batter spread out into a nice crepe form. Cook until lightly brown on each side, and thats it!
